Thank you for supporting the Urban Economic Development Association of Wisconsin’s (UEDA) fundraising event, Carnival Milwaukee, held on February 27, 2010. I have had an opportunity to sample some of Gregory Johnson, The Gumboman’s, fine Creole cuisine at the Mardi Gras Carnival held at the Milwaukee Public Zoo where he vended early last spring. Having been raised in a family of Louisiana origin and Creole roots, I have had my fair share of spicy and flavorful southern dishes. The Gumboman commands an authentic hand at capturing the essence of that New Orleans style Cuisine. My first contact with The Gumboman was during the spring of 2010 when he organized a gala fund-raising affair on Okauchee Lake at a mammoth lake shore estate. During the course of the event, Gregory presented dishes with such complex flavors, yet not at all overpowering. His creative ideas for culinary presentations and ease of access were inventive and entertaining; they were also astonishingly effective.
